CHARCOAL (carbón)
This is natural charcoal, not the pressed briquets you may be used to. It is not difficult to light (use pine pitch wood pieces also sold in the market) and its aroma when hot is wonderful. You'll see it used all over town in mom and pop eateries. Click here to read a story of how charcoal is made on the Caribbean island of Montserrat where we have a home. Although the briquets are available there, we never use them when we can get the real thing.

In Oaxaca in most markets, charcoal is sold in small plastic bags weighing about 5 lbs (2 kilos) each costing about 10 pesos or under a US dollar. You will find the charcoal called carbón for sale in areas where dried herbs are also sold. If you get lucky and are going to be here for a while, look for charcoal producers who have come to town to sell their wares. Just today we spotted a fellow at the Sanchez Pascua market who had several bushel bags. The price was just 120 pesos each or under US $10. He even offered to carry it to our home.
